Farmhouse showers are all the rage these days, and the cornbread version is one of the easiest ways to make your own cornbread, as long as you have a stove and can find one.
(For some reason, this one was banned in many states.)
You can make this simple, delicious cornbread recipe in a matter of minutes.
Start by mixing together 1 cup (200g) cornmeal, 2 cups (1,400ml) water, 1/4 cup (120ml) baking soda, 1 tsp.
salt, and 1/2 tsp.
baking powder in a medium bowl.
Add 1 1/3 cups (400ml or 1,600g) water and mix well.
Pour in the baking soda and mix again.
Pour the cornmeal mixture into a large mixing bowl and beat for about 15 minutes, or until the mixture is very smooth.
The mixture will be foamy.
(It is important to not use a mixer to beat, as this will cause the batter to get sticky and hard.)
Place the corn bread mixture in the fridge for about 2 hours.
Meanwhile, preheat the oven to 350°F (177°C) for the cornflour.
In a large bowl, combine the flour, cornmeal (with salt), baking soda (with baking powder), baking powder, salt, cinnamon, and pepper.
Whisk the wet ingredients together until the dry ingredients are well combined.
You can stir the wet ingredient into the dry to help prevent the batter from sticking to the sides of the bowl.
Place the bowl into the oven and bake for 15 minutes.
Flip the bowl, let the corn flour cool completely, and then add the baking powder.
Sprinkle with 1/8 tsp.
cornflake mixture and bake another 5-7 minutes until the corn is golden brown.
(You can also let it sit for a minute or two longer if you’d like it a little crisper.)
The cornbread will be a little softer than you’d expect, but will still be a nice-to-mouth-feel.
Serve warm or cool, or even at room temperature.
It makes a great meal or snack for breakfast, lunch, or dinner.
